Since there are so few ingredients, I suggest to find the best and freshest you can, really lets all these tasty flavors pop. Here is what you'll need
-1 small or 1/2 large seedless watermelon cut in bite sized cubes
- 1 small red onion sliced in half moons
-1- 8 oz package of good quality feta cheese. Your deli might have it packed in water
-1 handful of fresh mint leaves coarsely chopped
-1 handful of fresh flat leaf parsley coarsely chopped
-1/2 cup pitted Kalamata olives (chopped)
-juice of 2 limes
-3 to 4 Tbsp of olive oil
& some fresh ground black pepper
Place the onions in a small bowl and cover them with the lime juice to steep. (takes out a little of the bite) In a large bowl or rimmed platter, add the melon, feta, olives and herbs. Pour in the onions in lime juice. Using your hands or wooden spoon, gently toss. Finish with a generous amount of cracked pepper and serve.
I know...it sounds weird, but I have brought it to many a BBQ and even the finickiest of eaters will be coming back for seconds.
You can make it in advance to let the flavors mellow and marry. If gets a little too soggy from all the moisture being released, just serve with a slotted spoon.
